Dear readers, Christmas is round the corner. In midst of disasters - flooding in Thailand, Philippines and Malaysia and the economic gloom hovering over Europe, I just want to be in a quiet corner. I do not look forward to year 2012 because I do believe that times would be much harder for many. In midst of the year end revelry, I thought about the lonely, the widows and people who lost their spouse this year and how Christmas would be on a sadder note. Yet, the real meaning of Christmas, God sending Jesus to mankind that we may have life and life abundant-I will dwell on this-to celebrate God's goodness and love.
A friend's son in college breaks yearn to eat turkey and somehow I ended up roasting a bird and cooked other dishes to complement. When I went to the first shopping mall, it was sold out. Panic hits-everyone is expecting a roasted bird to turn up. Went to another shopping mall and bought a 4.7kg bird for around RM94++. Phew! It has been years since I roasted (ever since price rose from RM40++ to current pricing for same weight; my oven bought specifically for turkey roasting has been sitting quietly being underused). Heard an advice to use black soya sauce to achieve quick browning - I ended up with ebony skin. The whole turkey was moist though, so I wasn't that much distressed. It was great coming back to roasting turkey - its like welcoming a long lost friend.
Mushroom pie turned up well. The shortcrust pastry was flaky and the filling was superb. The white button mushrooms cooked in oyster sauce together with roughly chopped roasted potatoes and top with grated cheese flavours blended well.
