Mint soup




Come dinner time and my fridge did not offer much choice for cooking!  Decided to make the quick and easy mint soup.  Went out into the garden and plucked  a bunch of mint leaves.  There wasn't many leaves though due to my lack of care.

To enhance the flavour, I added 3 pieces of lemon balm leaves.  I read somewhere that lemon balm is good against aging.  Now, that is really a good reason for you to green your fingers and start planting.  If one is down with cough, one can steep a few leaves in hot boiling water to make a drink.

The recipe for the mint soup goes like this:

Few stalks of  mint leaves
3 pieces of lemon balm leaves
Chicken stock
1 uncooked salted egg – cut yolk to cubes
2 rice bowl of water

Bring water to boil. 
Drop in all the leaves. 
Stir in salted egg – keep stirring to have the whites in shreds.
Add chicken stock and adjust to taste.
Switch off heat and serve hot.
