The humble chopstick....

I hate soggy bread!

I recalled having Hainanese bread served on a wood rack at one of the local cafes.  At that time, I could see no reason for them to do so unless for food styling.  Since I have a number of disposable chopsticks, I decided to make a few racks.  Just gather three sticks and tie with hemp string.  Bring a pot of water to boil and drop in the racks to 'sanitize' them.

I use the rack in my kuali/wok for steaming purpose - see pic 2.  Most of the time, I use the rack to hold the  bread after microwaving/toasting.  Without the rack, the heat from the bread would cause water condensation on the plate.  Here's to a great meal....with the humble chopstick!
