Sprouting beans



Have some mung beans sitting on my kitchen shelf for some time.  Wanted to boil and make green bean drink.  Went about to soak them and as usual, was kept busy, busy, busy and forgotten about them.

When I came back to them again, they have sprouted a little.  Decided to change the course of history for these little greenies - gave them daily baths to encourage further sprouting.  After photography session, I transferred them to a container and kept them in the fridge.  Used them over a couple of days.  I blanched them and tossed them with sesame oil, black pepper and a little soy sauce.   It was deliciously crunchy and nutty - goes well with rice and noodles!  Never bothered to remove the green skin as it is good fiber to diet and save time - ahem! not to mention that I was rather lazy actually......
